Lemons + Blueberries

Oh yeah! 

Those two go together like Sonny & Cher.  Like cereal & milk.  Like chocolate & chocolate.  Hey give me I break I like my chocolate just plain with an extra side of chocolate.

One compliments the other.  Just like I compliment the hubster.  He thinks he compliments me.

I let him think it. 

I have no problem admitting he wears the pants in the house.  I just tell him how to put them on!

The point is lemons and blueberries do fine things when they get together.  You don’t believe me?  Then just try these…..

Lemon-Blueberry Pancakes

  • 1/4c + 1T pancake mix ( I used oat flour mixture)
  • 3T Chobani lemon yogurt
  • 1 egg white
  • 3T almond milk
  • blueberries
  1. place pancake mix in a small bowl
  2. combine the yogurt, egg white, and milk
  3. add wet to dry, combine
  4. pour batter onto griddle, drop blueberries on top of pancake
  5. cook on both sides until golden brown
  6. top with additional berries and maple syrup

Now drizzle those babies with some pure maple syrup.

  2. Blueberries are good paired with just about anything! I had some with strawberries and greek yogurt this morning – watching the dolphins! We leave Saturday and I’m already dreading work Monday. But those pancakes look delish – like all of your pancake creations!

    Hope your first day was good – despite meetings galore!

  3. Helen! Have you ever tried the blueberry lemon bars that Jamba Juice used to sell? They were SOOOO good. I wonder if these pancakes taste like em 🙂 hehe

  4. I’ve never thought about using yogurt for pancakes! I agree lemons and blueberries go great with pretty much anyhting they’re added to… you’re invited to texas Saturday morning when I’ll be making these!
