Just Breakfast!

I pulled out an old favorite of mine this morning that is very simple.  I just had to share!

Banana Walnut Protein Oatmeal

  • 1/3 cup almond milk
  • 1/3 cup water
  • 1/4 cup cottage cheese
  • 1 small banana sliced & divided
  • 1/3 cup oats
  • 2 tbs. flaxseed
  • dash of salt
  • vanilla extract
  • 1/2 scoop vanilla protein powder
  • sprinkle of cinnamon
  • walnuts

Combine the milk, water, cottage cheese, 1/2 banana in a small saucepan.  Use a whisk to “whip” the mixture occasionally as it heats.  Add in the oats and flax and dash of salt.  When the oats are finished cooking (will be thin) add in the vanilla extract, protein powder, and cinnamon.  Mix well (oats will thicken).  Top with the remaining banana slices and walnuts.  Sprinkle with more cinnamon.
