Spring has arrived 😉
We only have the joy of spring weather for a mere month or so here in south Louisiana. You see we will have nice cool temps for early morn heating up to 80ish degrees during the day. That is perfect weather. Sadly it is short lived. By next month it will be sweltering from the get go!
What are some other signs that spring is in the air other that flip flops and sleeveless tops?
Allergies. Hyper school kids. Snowball stands. And of course one of our favorites….little league ball!
T-ball & coach’s pitch have arrived. This of course means that I am one super busy mama!
Two boys = two different ball practices and about 3-4 games per week when the games start. This is on top of running a household, gym, and work….yikes!
Needless to say dinners have to be quick and simple. So I give to you tonight.
Banana Berry Oats
- 1/3c almond milk
- 2/3c water
- 1/2 banana, mashed
- dash salt
- sprinkle cinnamon
- 3T cottage cheese
- 1/3c oats
- sliced strawberries
- 2T wheat germ
- 1T chia seeds
Combine the milk, water, salt, cinnamon, and banana in a small sauce pan and bring to a simmer. Add in some sliced stawberries, blueberries, oats, wheat germ, and chia seeds. Turn the heat to low and cook to desired consistency.
Add more strawberries, blueberries, and sliced bananas on top with nut butter and coconut butter 🙂
Now that is a quick & simple dinner that is delish as well 🙂
