Everything is going fabulously over here at Isle Helen, thanks for asking!
But there is one thing I should probably tell you about……
There is no McD’s over here on Isle Helen. We don’t do fake food here. We do real food. Real & healthy food. Food that makes you wish you never had eaten fake food. Food that even your kiddos will request to take for lunch the following day.
We have Isle Helen chicken nuggets! Made with real chicken. All white meat. Wonderfully healthy breading. No deep frying here, all oven baked. Yet still crisp 🙂
Not to mention very well seasoned. Who wants to eat plain chicken?
Chicken Nuggets
- 1/2c buttermilk
- 1T wing sauce
- 2 chicken breast cut into chunks
- 1/2c whole wheat flour
- 1/4c bulgur wheat
- 1t paprika
- 1t onion powder
- 1t garlic powder
- 1t paprika
- Preheat oven to 350
- Mix the buttermilk and wing sauce in a shallow dish. You may use more or less wing sauce depending on the spice you like.
- Combine the flour, bulgur, and seasonings in a pie dish. Make sure the seasonings are well combined.
- Dredge the chicken chunks through the milk mixture, then roll in the flour mixture.
- Place on a baking sheet that has been covered with foil and sprayed with non-stick spray.
- Spray chicken chunks with olive oil spray
- Bake for 15 minutes on one side, flip, spray, and cook another 15 mintues.
- Remove from oven and enjoy
The bulgur wheat helped to give the nuggets some crispiness to them. They were wonderfully seasoned and made great leftovers for today’s lunch!
We also enjoyed a lovely baked sweet potato with some of this on top…

Now for this mornings island breakfast!
Last night I combined 1/4c oats, 1/2c almond milk, 2T vanilla yogurt, 1T chia seeds, 2T coconut, cinnamon & few drops of vanilla stevia in my blender and blended away. I then stirred in 2T of whole rolled oats and placed in the fridge.
Lovely doughy overnight oats 🙂
This morning I stirred in another 1/2c almond milk and layered the oats in a lovely glass with banana slices. But not just banana slices. Oh no, we can’t stop there. We also included some….
Salt & Honey kissed Walnut Butter
- bag of walnuts, roasted
- 1t sea salt
- 1T honey
Blend all ingredients in a blender until nice and drippy/creamy.
So I had a parfait of sorts. Although you can’t really see layers since the oats folded around the banana and walnut butter. But you can see them on top. With an extra dash of cinnamon 🙂
Because you know on Isle Helen nut butters are not optional. They are mandatory. You must include at least one type of nut butter in your breakfast. You must contain several varieties of nut butters in your refrigerator.
And the man on the island can not complain about the jars taking up space in the fridge. Because nut butters are mandatory….I’m talking to you hubster. For your information I do need an entire shelf and drawer just for my foods!
After all I need all the protein & good carbs I can get so I am able to keep up with this little guy 🙂
Because it is very important that we attend the Easter party.
Equally as important, that we participate in the egg hunt!

Everything looks delicious! The chicken nuggets at McDonald’s are so disgusting, they don’t even taste like meat of any kind to me. You’re lucky that on Isle Helen you don’t have to eat such junk!
I totally agree! Some of mybfriends think I am crazy since we use to live for fast food, but once you educate yourself it is really hard to like fake products 😉

I saw a video of how they made ‘real’ chicken nuggets once, and it totally grossed me out. Way to go for improving them!
Yeah I love how mechanically seperated chicken is bubble gum pink and looks like taffy! I mean really!
I’d eat those chicken nuggets any day. And no twisting my arm on the nut butters! I have half a shelf too!

I’m a grown up, but these have me craving chicken nuggets! I remember I used to peel off the fried skin at McDonalds, even when I was little I knew it was gross. These look great – lucky kiddos!
