not what the bunny had in mind

Happy Easter!  I hope you all have had a wonderful, candy & fun filled day.  I know we surely had one.

We started our lovely holiday this morning with a laugh.  Kohl woke up, climbed in the chair with his dad as usual, and demanded his “coffee”.  What???

No excitement.  No giddiness.  Not a care as to what the bunny had in store.  We had to remind him that it was Easter.  We had to point out that the bunny left a basket of goodies.  We even had to tell him not once but twice to see what he had.

Of course we then had to tell him to wait for his brother.  We had to get Kohl to go wake up Noah.  That didn’t work.  We had to go wake him up ourselves.  We had to insist that he get out of bed to see what the Easter Bunny had left in his basket.  It was about five minutes later before he ventured to the table.

Now with it being Easter I knew that a special breakfast was in order.  One that we do not have on a normal day.  One that was Easter worthy.  I am sure Mr. Bunny is expecting something with chocolate, and marshmallows, and tons of sugar. 

We didn’t have anything remotely close to that.  We enjoyed a healthy breakfast.  I knew that the boys would end up with tons of candy.  The first meal had to be healthy.  The only problem was deciding on sweet or savory.  So we had both.

Crepes!  One filled with yogurt, strawberries, honey, and topped with additional fruit and fresh whipped cream.  One filled with scrambled eggs with parsley and goat cheese crumbles, topped with salsa.

Surely this in not what the bunny had in mind!

But they were delicious.  I should make crepes more often.  They were super easy.  And since I am making them, you should make them as well.

Crepes

  • 1c unbleached all purpose flour
  • dash of salt
  • 1egg
  • 1/2c almond milk
  • 1/2c water
  • dash of vanilla

Combine the flour and salt in a bowl.  Whisk in the egg.  Then whisk in the remaining ingredients until well blended.  Preheat a 10 inch pan and spray with non stick spray.  Pour 1/4c of batter into pan and swirl around to make a thin layer in the bottom of the pan.  Cook until edges are set.  Flip and cook on opposite side.  Remove and place in warm oven. 

Once the crepes are cooked, you can then add in your filling.  What ever you choose is fine.  I mean if you really want marshmallow and chocolate, I am sure that would work.  It would make a lovely dessert 🙂

Of course you can go with just a sprinkle of powdered sugar, but it is Easter.  Let’s make them special ok!

The kiddos enjoyed an egg hunt.

They enjoyed playing ball. 

They enjoyed lots-o-candy.  They enjoyed playing with my sister’s baby bunny.

The boys discovered that they could fit into the cage with the bunny.  Barely but they could.  In their minds this solves the problem of not being allowed to take the bunny out of the cage.

  1. Haha, so cute! Those crepes look delicious! Your kids will eat goat cheese?? You should be proud, me and my siblings wouldn’t go near the stuff till maybe age 13! They must have extra mature taste buds from having such a good cook for a mom!
