Yay, it’s summer!

Guess what?  It’s summer vacay for me 🙂

That means a glorious two months off, no alarm clocks, no schedules, no lunch packing, no WORK!!

Oh and I am in Pigeon Forge, TN at the moment 🙂

So in order to celebrate this glorious occasion, I indulged in a couple of delish breakfasts over the weekend.

Breakfast 1:

Cinnamon Raisin Buckwheat Bake

  • 3T ground buckwheat groats
  • 1T whole groats
  • cinnamon
  • dash of salt
  • 1t baking powder
  • 1 egg
  • 1/4c apple sauce
  • 1-2T almond milk to thin
  • dash of vanilla
  • few drops of vanilla stevia
  • 1/4c raisins

Combine all ingredients together in a bowl until well blended.  Spray a baking pan with non-stick spray, bake in a preheated 350 degree oven for about 30 minutes.

Top with maple syrup, honey, sugar glaze, jam, nut butter, or whatever else your little heart so desires.  I used maple syrup.  This was delish.  It tasted like an apple cinnamon muffin.  It was as soft as a muffin.

Now I can’t stop there – oh no!  It is summer break.  This requires a little indulgence.  This requires something sweet.  This so requires some wonderful chocolate!!

Banana-Peanut Butter-Chocolate Chunk Oat Cakes

  • 1/3c oats
  • 1t baking powder
  • cinnamon
  • dash of salt
  • 1/2 mashed banana
  • 1 egg
  • 2T almond milk
  • 1T peanut butter
  • chocolate chunks

Combine all ingredients in a small bowl.  Let it sit and rest for about 10 minutes.  Spray a preheated griddle with non-stick spray.  Cook on both sides until well done.  Top with remaining 1/2 banana (sliced), a few chocolate chunks, and some honey.

Now go in your kitchen at this moment and make these cakes.  It doesn’t matter that it is dinner time.  Haven’t you ever had breakfast for dinner?  Besides it’s morning time somewhere!

  1. Yay for summer vacation! It’s funny because just as you are going into vacation because it’s summer, I am going into work because it’s summer. You will enjoy yours much more than I’ll enjoy mine, haha! The breakfasts look awesome, have fun in TN! 🙂
