Pour Some Sugar On Me

I have a sweet tooth.  Correction:  I have sweet teeth.  It has to be more than one because this woman loves her desserts!  There is no way that one tooth can possibly make someone want just a little something sweet after or with every meal.  And I do mean every meal. 

This is the downfall of my usual dietary habits.  This is what causes me to not achieve my weight loss/health goals.  This is why I have back fat.  This is what keeps me from achieving my six pack abs…..okay who am I kidding!  That is part of it but two babies later = never will I see six pack abs.  Maybe a four pack, I would be okay with a four pack!

So I have been thinking about this little problem of mine, trying to come up with a solution.  I have considered self confinement.  I have considered hypnotism.  I have even considered sabotage.  But let’s face it, none of the choices are logical or healthy.

This has lead me to researching and experimenting with sugar free recipes.  As I delve into this new world I am sure I will have several unsuccessful recipes along the way, but I am eager to start this challenge.

Of course the first step of the challenge is to find a sugar substitute that is healthy, natural, and tastes good as well.  To many sugar substitutes on the shelves these days are not good for you, they have crazy things added to them, and I for one am not interested in putting aspartame into my body.  Thankfully there is a little thing called stevia.

Now I know what many of you are thinking….stevia leaves a bitter after taste.  I felt the same way when I first tried it.  I think I went through three different brands before giving up.  Who wants to use a sugar substitute if it tastes yucky?

Fortunately  I have some of the NuNaturals products. 

I was sent a package from the company in January to review.  I was very pleased to discover that the products do not leave the nasty bitterness in your mouth when eating foods sweetened with them.  This equals a happy girl!

So in honor of this new goal of mine, I decided to create a little snack that will take care of my sweet teeth.  As many of you know I made sugar free ice cream the other day with much success.  But let’s face it, as much as I would love to I can’t make ice cream everyday.  I mean I do eventually have to  leave my house!

I opted instead for another favorite of mine…..brownies.  But not just your usual brownies.  These are brownie bites, dark chocolate brownie bites 🙂

Dark Chocolate Brownie Bites

  • 4 squares good quality unsweetened baking chocolate (70% or darker)**
  • 1T NuNaturals no carb powder
  • 1/3c applesauce
  • 3 egg whites + 1 whole egg
  • 1/4c strong coffee
  • 1t vanilla extract
  • 1/2c unbleached all purpose flour
  • 1/4c cocoa powder
  • 1/2t baking powder
  1. Preheat oven to 325 & prepare your baking pan by spraying with non-stick spray
  2. Melt chocolate over double boiler.
  3. In mixer, beat stevia, eggs, applesauce, coffee, and vanilla.  Add in the chocolate and combine.
  4. Combine dry ingredients in a separate bowl with a whisk.
  5. Add the wet ingredients to the dry ingredients and stir until mixed well.
  6. Pour batter into prepared pan and bake until center is done.***

** you may substitute dark cocoa powder for the baking squares if necessary.  3T cocoa powder + 1T water will equal one baking square.

***if using a mini muffin pan bake for approximately 15 minutes.  If using a different pan you will need to adjust cook time to approximately 30 minutes.

I decided to go with the brownie bites, but for those of you that do not have a mini muffin pan feel free to bake them in a brownie pan or regular muffin pan. 

I really like having the bite size brownies.  This makes it easy to just pop one two in my mouth after my meals to help with my sweet cravings.  I usually leave about 8-10 out and freeze the remaining.  They freeze well making it easy to grab and go for a quick sweet snack.  This also helps with portion control 🙂

  1. I’m not entering your contest, but I just wanted to say that those brownie bites look lovely! Yum! I also have a major sweet tooth. I’ve been making ice cream for dessert every day for a few weeks. I put it in a cone, and it’s even better than the “real thing”.

    Whoo hoo, I have a major sweet tooth! And what would I use the product for, well other then the obvious for baking, I also think it would be wonderful in hot tea-I struggle drinking water and the vanilla flavor looks like it would be a wonderful addition to my morning green tea!     Oh my gosh!!! I’ve wanted to try NuNaturlas for a while now! I would use them to make 1) those brownies!! (they look delishh!) 2) see if I could whip up some PB cookies with them YMM 🙂 and then hopefully lots of other baked good or ice cream creations!
