I have been enjoying the fruits of my labor a little too much lately. Of course the only problem is that they haven’t actually been any fruits involved.
After my brief overindulgence affair with my little dark chocolate friends I needed a little savory in my life. After all one can not live on cookies alone. Although I am tempted to test that!
So I did what any good mother that has recently overdosed on chocolate would do.
I made dip! Game day dip to be exact. You see last night was the first season game for NFL, which also happened to be first season game for my beloved Saints. Yep, I’m a fan! Let’s not talk about game performance last night mmkay. Instead let’s give all the glory to the dip!
But before we get to the dip let’s talk garlic. Or roasted garlic to be more specific. This is important! Have you ever had roasted garlic? No, well you need to. I actually like to roast several bulbs of garlic and keep in the fridge. You can use this in all types of recipes. Roasted garlic has a great flavor. Use in recipes that call for garlic, spread on bread, or eat right out of the clove.
To roast garlic simply cut the top off of the bulb to expose the cloves. Drizzle a teaspoon of olive oil on top and let it soak in for about 10-15 minutes. While you are waiting for the olive oil to soak in preheat the oven to 375. Wrap the bulb in foil and roast in oven for about 45 minutes.
So back to the dip…..
I made a savory dip. I made a dip that will put Tostitos to shame. Unless you are like the hubster, then no dip can put Tostitos to shame. Except the dip at the Mexican restaurant 🙂
Roasted Garlic – White Bean Dip w/ Basil
- 3-4 cloves of roasted garlic
- 1 can cannellini beans, drained and rinsed
- 1T basil (I use organic basil that I buy in a tube, if using fresh use around 2T)
- 3T olive oil
- 1/2t salt
- 1/4t pepper
Combine beans, basil, roasted garlic cloves, salt and pepper in a food processor and blend until smooth. With the processor running, stream in olive oil in. Continue to run the processor until you get a smooth and creamy dip!
I must confess that I didn’t come up with this idea all by myself. There have been many recipes in blog land on bean dips. Made with various beans. This isn’t an uncommon thing to find in blog land. However, I do recall seeing a roasted garlic bean dip on a blog last week. I can’t remember which blog I saw it on. I can’t even remember what all she used in the recipe. Other than roasted garlic. I of course do not have time to go back through every blog on my list to see which one posted it. So I am asking you guys. My readers, my friends. If any of you know which blog posted a recipe about roasted garlic bean dip please leave a comment telling me. That way I can pay it forward. Thanks 🙂
Now back to the dip. Put it in a cute little bowl along side your favorite chips. Or have it with your favorite crackers. Or with your favorite chopped veggies. Or if you are like I was last week (which I pray that isn’t the case) then feel free to eat it with a spoon. It is okay. I will not judge. It is wonderful as a sandwich spread as well!
You may also want to hide while you eat this. No not because of the garlic breath. Although if you have a significant other that may be a problem. No you will want to hide because you will not want to share. Then brush your teeth. A little mouthwash may be needed as well.
