This ain’t McD’s chicken nuggets

Everything is going fabulously over here at Isle Helen, thanks for asking!

But there is one thing I should probably tell you about……

There is no McD’s over here on Isle Helen.  We don’t do fake food here.  We do real food.  Real & healthy food.  Food that makes you wish you never had eaten fake food.  Food that even your kiddos will request to take for lunch the following day. 

We have Isle Helen chicken nuggets!  Made with real chicken.  All white meat.  Wonderfully healthy breading.  No deep frying here, all oven baked.  Yet still crisp 🙂

Not to mention very well seasoned.  Who wants to eat plain chicken?

Chicken Nuggets

  • 1/2c buttermilk 
  • 1T wing sauce
  • 2 chicken breast cut into chunks
  • 1/2c whole wheat flour
  • 1/4c bulgur wheat
  • 1t paprika
  • 1t onion powder
  • 1t garlic powder
  • 1t paprika
  1. Preheat oven to 350
  2. Mix the buttermilk and wing sauce in a shallow dish.  You may use more or less wing sauce depending on the spice you like.
  3. Combine the flour, bulgur, and seasonings in a pie dish.  Make sure the seasonings are well combined.
  4. Dredge the chicken chunks through the milk mixture, then roll in the flour mixture.
  5. Place on a baking sheet that has been covered with foil and sprayed with non-stick spray.
  6. Spray chicken chunks with olive oil spray
  7. Bake for 15 minutes on one side, flip, spray, and cook another 15 mintues.
  8. Remove from oven and enjoy

The bulgur wheat helped to give the nuggets some crispiness to them.  They were wonderfully seasoned and made great leftovers for today’s lunch!

We also enjoyed a lovely baked sweet potato with some of this on top…

Now for this mornings island breakfast!

Last night I combined 1/4c oats, 1/2c almond milk, 2T vanilla yogurt, 1T chia seeds, 2T coconut, cinnamon & few drops of vanilla stevia in my blender and blended away.   I then stirred in 2T of whole rolled oats and placed in the fridge. 

Lovely doughy overnight oats 🙂

This morning I stirred in another 1/2c almond milk and layered the oats in a lovely glass with banana slices.  But not just banana slices.  Oh no, we can’t stop there.  We also included some….

Salt & Honey kissed Walnut Butter

  • bag of walnuts, roasted
  • 1t sea salt
  • 1T honey

Blend all ingredients in a blender until nice and drippy/creamy.

So I had a parfait of sorts.  Although you can’t really see layers since the oats folded around the banana and walnut butter.  But you can see them on top.  With an extra dash of cinnamon 🙂

Because you know on Isle Helen nut butters are not optional.  They are mandatory.  You must include at least one type of nut butter in your breakfast.  You must contain several varieties of nut butters in your refrigerator. 

And the man on the island can not complain about the jars taking up space in the fridge.  Because nut butters are mandatory….I’m talking to you hubster.  For your information I do need an entire shelf and drawer just for my foods!

Let’s talk “B”

You pesky little critter.  Buzzing around annoying people.  Making us run from you for fear of allergic reactions.  Yeah, your colors are pretty, but we still dislike you!

Nah just joking!  I am not referring to that type of “ Bee”.  I am referring to the letter “B”.  Is that not a lovely letter?  I feel it is a great letter.  Why? 

Well because some of my favorite things start with the letter “B”!

Breakfast – yep, my favorite meal of the day.  I would be lost without you breakfast.  I love you so!  I even enjoy you for lunch and dinner on occasions 🙂

Brownies – oh yes!  Oh how I am addicted to your chewiness and taste.  We have such a passionate love affair, don’t we.  And the chocolate, ohhh yeah it’s my favorite part 🙂

Bacon – you are not good for me, but I like you.  But I must admit that I am a little jealous of you!  The hubster adores you.  So do the little ones.  Some mornings I feel like you take all of the attention.  But it’s okay, I do enjoy you occasionally!

Beach – hello lover!  I am convinced that the hubster is jealous of you!  Which makes me smile.  Because if you know the hubster, then you know he doesn’t get jealous.  But he knows how I love you so.  He knows about my passion for you.  I think he even knows about out affair every summer…..but shhh just in case!

But that is not all I love!

What you guys don’t have brownies for breakfast?  I mean really, come on!  Brownies for breakfast are the best, especially when they are healthified 🙂

Brownie Buckwheat Bake

  • 3T buckwheat groats, ground
  • 1T whole buckwheat groats
  • 1/4t baking powder
  • 2-3T cocoa powder
  • 1t cinnamon
  • dash salt
  • 1T flaxseed
  • 1T chia seeds
  • 1/2 banana, mashed
  • 1t vanilla
  • 1 egg
  • 3T almond milk
  • stevia drops
  1. preheat oven to 350 and spray baking dish with non stick spray
  2. mix all dry ingredients together in a small bowl
  3. mix all wet ingredients together in a measuring cup
  4. make a well in the dry ingredients and pour in the wet
  5. combine until just mixed, pour into dish, and bake in the oven for about 30 minutes

Now for the fun part.  Drizzle on the butter!  Not just any butter but yummy pecan butter.  That stuff is super drippy and amazing.  Okay we aren’t done yet, oh no.

Stuff those babies with some delicious, sweet strawberries.  I know it doesn’t start with a “ B” but come on they are gorgeous!  And who doesn’t need a little arm candy? 

Every one does!  Even brownies 🙂


No hubster, you can’t have Jessica Simpson as your arm candy.  You are stuck with me 🙂

Christmas in October!

What a wonderful way to end the  work day!  Not one but two packages were awaiting my arrival today.  I am not sure who is more excited me or Kohl 🙂 

He was super excited to find out he could help open the box.  I wonder what’s inside?

None other than my wonderful Artisana package that I won in a giveaway from Chelsey over at Clean Eating Chelsey!  Thanks so much for the giveaway Chelsey.  I am so excited to try the coconut & nut butters! Just look at that spread! 🙂

My care package from Crunchmaster, yippee!!  I have at times commented on some posts about how difficult it can be to get good quality products in the area I live.  You see the nearest natural foods store to me is a Whole Foods; however, it is a 30-40 minute drive for me to reach it.  Not very convenient when you have two kids and work full time.  I go as often as I can! 

So I emailed Crunchmaster enquiring about the possibility of other stores that may be in my area that carry or at least could possible carry their products.  I was all ready to go to the manager of a market and request the order.  They were so kind as to provide me with some names of small businesses (that I didn’t know about) with their products, as well as send me a care package!  They are super great at that company!

Now if two packages didn’t surprise me enough……


That is a beautiful sight to me!  The hubster came home with this wonderful bag of okra today 🙂  I LOVE okra! 

It was like Christmas around here.  Just as much excitement with all the new and wonderful goodies.  Yes, I do get this excited over food…haha!

Tonight’s menu obviously had to be altered to include that okra.  I cooked dinner for my neighbors tonight (as mentioned earlier) to help them out with moving into the new house.  Poor guys are running into some last minute issues with finishing it all up 😦

Tiffany loves my stuffed bell peppers.  Now I had to shy away from my usual meat choices and use actual ground beef as opposed to ground turkey, but for those two I would gladly make that swap.

Look at those green soldiers standing at attention!  My little stuffed pepper army. 

A side of roasted red potatoes w/ hummus for dipping and “fried” okra with scrambled egg.  Now you may be wondering why I put scrambled eggs into such a great veggie….

That is just how the hubster likes it, and of course if I want to keep those lovely mugs of coffee coming every morning, I do occasionally have to bribe spoil him as well.  Who am I kidding…with all the cooking and baking I do he is always spoiled! 

But of course so am I 🙂
