what I am loving right now!

Wow what a week.  We have been slam packed with ball games this week.  As well as homework!

I mean really, do you remember having so much homework as a kid.  This makes it super tuff with ball season in full swing.  We usually get home around 4:00 p.m. from work/school.  We have to be on the ball field for practice or games by 5:30.  Hello that is only an hour to do homework.  Cuz you know you gotta drive to the field and all.  It is usually between 7:30-8:00 before we get home.  Just enough time to eat, shower, and hit the bed.  Oh wait we still have to finish homework!

I am voting for no homework during ball season.  Who’s with me?

Needless to say I am really enjoying my quick go to meals here lately.  So here are some pictures of things I am loving right now 🙂

The hubster and I had a wonderful date night last night that included a little shopping (for the house) and dinner.  I had a wonderful Portobello mushroom Panini.  I regretfully have no pictures.  We were so excited to have a free night to ourselves that I totally forgot to pack blogging necessities!

One Hot Mamacita!

What happens to you when you become a hot mamacita? 

I did a little research today to see what my future will hold.  Here we go:

  1. It is now going to be required that I hire a bodyguard.
  2. I will drive around on M-W-F in my black Escalade, T-Th in the black BMW, oh and the hot pink Mercedes will be for the weekends!
  3. My new line of perfumes will be coming out this summer, keep your eyes open for it.
  4. While I’m at it, I should probably just start my on clothing, shoe, and handbag line as well
  5. I will proudly carry around my black credit card and pay 700$ for underwear….Victoria’s who?
  6. I must have my own reality t.v. show where I will repeatedly embarrass myself, my family, and my kids will  change their las name so they aren’t associated with me.
  7. I will probably do a stint or two, or three, maybe even four in a secluded rehabilitation facility somewhere in the midwest.
  8. I will then start gaining weight, losing my hair, getting bad skin, and “retire” someplace where no one knows my name.
  9. I will eventually end up on “Where Are They Now”, with my kids still embarrassed to have me as a mom!

Yep, that is basically what happens to a hot mamacita.  I’m gonna need a lot of vino to prepare me for this.  Hey, I might as well get started on the addiction right?

Oh no she didn’t!  Oh yes I did!!

OIAJ – with a little treat mixed in.  I used the last peanut butter muffin and crumbled that baby up in my oats.  I put half of the muffin in the middle, the other half landed on top with some coconut 🙂

Okay enough about breakfast.  Let’s get back to me being a hot mamacita.  I mean it was only a matter of time right?  With all the clean eating and working out!

Buffalo Chicken Pasta

  • leftover buffalo chicken dip
  • whole wheat egg noodles
  • 1c frozen soy beans

Place all ingredients into an oven safe dish and bake at 350 until hot and bubbly!

Now I told you guys this dip was super hot the other day.  The buffalo chicken dip was the star of the super bowl snack table – because it was so hot!

Being a person that hates to throw food away, I decided that I must figure out a way to use this.  The reason the dip is so hot is due to the brand buffalo sauce that I had.  The brand I normally buy is no where near as hot as this.  Instead of using 1/4c like my normal recipe, I should have used like a tablespoon!

In goes pasta and veggies, a little more ranch, still a no go.  I couldn’t eat it!

Thank goodness I had a little of this….

Citrus Kale Salad

  • 3 cups kale leaves, torn into bite size pieces
  • 2T olive oil
  • 1 clove garlic, minced
  • juice of 1/2 lemon
  • juice of 1/2 small orange
  • 1/4c raisins
  • 3T sunflower seeds

Toss all ingredients into a medium sized bowl and mix until well coated all over.

What?  Did you guys seriously think that I was being super conceited talking about how hot I was?  Nah, I’m talking about the heat going through me from eating that pasta.  Needless to say we had to dump it…I hate wasted food!

I will now be going to take a lovely bath, sip on some ice cold water, and pray we get a little snow!!

Bitten

I spent half of my night last night sleeping on the couch!  Can you believe that, me – MOM – on the couch!!  Kohl decided to take a detour on his way to who knows where last night, that detour just happened to be my bed.  There is nothing like feeling little arms and legs twisting their way into your bed at midnight.  The logical part of me was saying no you can not climb into my bed, you have your own.  The illogical part of me was saying my your are really warm, hmmm my very own little space heater…hold up – sits up in bed at this point – warm, scratch that – HOT!  A nice temp of 102.5.  You know come to think of it, that use to be my favorite radio station 🙂

So after little whining and no complaint on my part I let him settle right on in.  That is until the thrashing wiggling started.  After about the tenth third “momma can I have some hot chocolate” came out of his mouth, I decided he needed to spend some quality time with daddy dearest!  I mean really, who asks for hot chocolate at midnight when they are sick? 

To the couch I went.  I think that is why my back is just a little stiff this morning, what do you think? 

Breakfast was good blissful this morning.  {It better be after the night I had}.  I have waited awhile to have the chance to enjoy my latest dreamed up much thought out creation.  You see like most people that have a fondness of oats, I am always trying to incorporate new flavors (cutesy names) into my morning breakfast.

Peanut Butter Cup OIAJ

  • 1/2 banana, sliced
  • 1/4 c almond milk
  • 1 c water
  • dash of salt & vanilla extract
  • 1/3 c oats
  • 2T flaxseed
  • 1/2 scoop vanilla protein powder

All cooked up nice and creamy with a lovely heaping teaspoon of cocoa powder.  Then pour into your nearly empty peanut butter jar and enjoy!

Just look at that peanut butter swirl.  While they didn’t taste exactly like a Reese’s peanut butter cup, they were delish 🙂

Moving on to the topic of the day…..

Yes, I will take that jacket, those pants, that cute little shirt over there, and I must have those heels to go with that dress.  That will be all for today thank you.  Isn’t it so nice that you can purchase Bitten for such cheap prices?  I do love some SJP!

We have been bitten alright…by the flu bug! 😦

We made a trip to the doctor today only to be informed that Noah has the flu, and since Kohl is starting with the fever/sniffles he will be close behind him 😦

This was waiting for me when I returned home from the pediatrician’s office.  I wonder what it could be?….stayed tuned to find out!

Unfortunately my children motherly instincts will not let me spend the day baking away…oh no, two days in a row was enough!  At least that is what I am letting them believe for the moment.  I am sure I will be fast to work on more recipes soon.  For now I will wipe noses, hand out the medication, disinfect the room every hour, give myself an asthma attack (even if I do not have asthma) with the over use of Lysol spray, and be at someone’s every beck and call for the next several hours. 

So for now I give my complete and total attention to my boys, but don’t worry I will be back soon with something yummy 🙂

Peace & Quiet

(Sigh) It is over, another work week down, one week closer to holiday break, and I have the very rare opportunity of sitting on my couch with complete silence around me!

The hubster and the boys are helping at the neighbors.  I have taken advantage of the absence and completely cleaned my house this evening.  Now some of you may be wondering why on earth am I cleaning my house on a Friday evening!  Let me explain….

After my 2 mile jog today (I know kinda sad) I came back home to prepare dinner.  The hubster informed me that he was going to help next door so he made himself a sandwich while I was out, and he also gave the boys some pizza!  I am off the hook for dinner 🙂

So since I had a little bit of energy in me after eating my fabulous dinner I made for myself, I decided what the heck!  Clean the house, it will be done and my weekend is completely open 🙂

So about dinner.  I commented on the last post that I couldn’t wait for my dinner tonight.   I was being honest, I couldn’t wait.  Tonight was going to be breakfast night but since I didn’t have to cook…..

Well are you ready for my fabulous dinner?  I promise it is the absolute best by far this week!

Pumpkin Oats!! – 1/3 cup oats, 1/3 cup almond milk, 1/3 cup water, 1/2 sliced banana, 2 tbs. ground flax seed all mixed in a saucepan.  Add in 1/4 cup pumpkin, pumpkin pie spice, vanilla, and 2 tbs. wheat germ at the end of the cooking process.  Pour into your bowl, top with your choice of toppings.  Enjoy 🙂

Let’s see it again shall we!

Mmmmmm!  Topped with sliced apple, cranberries, coconut butter, & almond butter.  I tell you that coconut butter is to die for!  It is going to seriously become a pantry staple.  I am so in love!

So of course I had a ton of energy after such a wonderful meal!  I so missed my oats for breakfast this morning, it was so very nice to have them for dinner 🙂

I am off now to take a nice bubble bath with a nice glass of wine.  Hey, I cleaned my entire house including the floors I so deserve that wine! 

Can’t wait until breakfast in the morn!  I love Saturday Breakfast.  Happy Friday 🙂

Meet Sam!

Finally a normal morning.  Okay wait a minute.  I have two boys, no morning is normal…lol!!

A good morning, how about that.  No rushing around for me today.  I was up with the alarm, today is jean day so dressed in no time, and the spare time to really concentrate on breakfast this morning 🙂

I call them my loaded “Thanksgiving Dessert” oats….

  • 1/3 cup oats
  • 1/3 cup almond milk
  • 1/3 cup water
  • 2 tbs. ground flax
  • 1/2 sliced banana
  • 1 tbs. wheat germ
  • cranberries, golden raisins, pomegranate seeds, sliced almonds, shredded coconut, granola, naturally!
  1. Mix milk & water in pan.  Add the banana when begins to boil with oats & flax.  Turn on low and simmer.  Whisk to cream the banana in the oats.
  2. Add the pumpkin during last minute of cooking.
  3. Pour oats in a bowl and top with remaining ingredients.

I promise there are oats under all of that!  Doesn’t that just look and sound like a spread of “Thanksgiving Desserts” 🙂

The hubster started me off with a nice cup of coffee….um….what is up with the Christmas mug?  Hello it is October!!  Guess I shouldn’t complain since he did bring it to me.

Okay so meet Sam!! 

This is Kohl’s puppy, Sam.  Sam is sick today, he has a fever 😦  Kohl had to bring him in the car this morning.  He wanted to take him to school, but mom had to intervene on that one.  He made me promise that I wouldn’t leave Sam in the car because that is bad.  I never break a promise to my boys so….Sam is with me at work!!

This mornings snack was some more of my Granola, Naturally! with 1/2 sliced banana, topped with milk!  I am addicted to that granola!

Lunch was yummy today!  An open face chicken salad sandwich with spinach, a cheese stick, and a squash and apple casserole I grabbed out of the freezer last night.

The Maple Butternut Squash and Apple Casserole is super yummy!!  The recipe is courtesy of Angela over at Oh She Glows, that girl knows a thing or two about food!!

I have a dinner to cook for our neighbors tonight.  They are moving into their new house that is finally complete.  I am helping out by providing them with a lovely dinner so they can concentrate on unpacking 🙂

Literacy Night

My days are mixed up!  If yesterday was uneventful and mellow, today is the total opposite.  It feels like a Manic Monday!  Let’s recap shall we….

6:00 am – The hubster wakes me up, informs me of the time, and I jump out of bed to begin the rush.  What do you mean it is 6?  The clock is set for 5:30….and no I didn’t hear the alarm, duh if I did would I be in the bed at 6?

What to do for breakfast?  Overnight oats would have been perfect this morning, but I did not plan that so none available.  I could choke down a bowl of cereal….I know that will leave me hungry very soon, not satisfying.  Okay so we will just be late and enjoy quick oatmeal 🙂

Chocolate Raspberry Oatmeal

  • 1/4 cup oats
  • 1/2 cup boiling water
  • 2 tbs. flax
  • 1 tbs. wheat germ
  • 1 scoop chocolate protein powder
  • 1/2 mashed banana
  • raspberry extract
  • peanut butter, coconut, granola
  1. Mix the oats, mashed banana, flax, extract in bowl.  Add 1/2 cup boiling water, cover, and let it sit for 5 minutes.
  2. Mix in wheat germ & protein powder.
  3. Top with granola, coconut, and spoon of peanut butter.

It was yummy, wam, and made the morning a little more bearable.  Am I the only one that eats around the blob of peanut butter so I can save it for last?

7:00 – rush to get kids awake and up.  I am still dressing myself at this point.  Usually I have dressed, made beds, unloaded/reloaded dishwasher by now.  This morning, still gotta finish dressing, make the beds, unload/reload dishwasher!  Jeez will I get it done in time…..

7:45 – leaving the house for work, phew!!  Only 5 minutes later than normal.  Yes, the beds are made, dishwasher unloaded/reloaded, and thankfully we are all dressed!!

8:00 – drop kids off at school through car pool, head to my school to begin my day.

8:10 – open email to all kinds of issues, blah!

Since then it has been meetings being cancelled, rescheduled, on the phone with parents, working on re-evaluations, print paperwork on new student, schedule new meeting, answering numerous emails, therapy, etc.   A very hectic work day.  Come to think of it this is worse than my usual Manic Monday’s!

Today’s cooler is pretty boring.  This is mainly due to the fact that I was running late, and also due to the fact that I desperately need to go grocery shopping to restock the basic essentials.

Around 8:30 I grabbed a Larabar to tide me over until lunch.  It didn’t help much but better than nothing.

Lunch today was pretty boring, and basically a repeat of yesterday minus the spinach.  Leftover stuffing from Sunday’s dinner with tuna mixed in, a nectarine, and some water.  No time to even make my lovely tea today 😦

My afternoon snack was hittin!!  Some of my granola with diced banana, served with almond milk 🙂  Now that put a smile on my face….and the fact that it is almost time for me to head out for the day!

Picked the kids up at school so I could rush home and figure something out for dinner.  We had some leftovers that needed to be used up so I had a combination of roasted sweet potatoes, fried rice w/ scramble egg, and pumpkin with salsa on the side.

The kids had literacy night at their school tonight.  Guess what?  I am basically back at the work venue for the evening, yuck!  But it was a fun night!!  We enjoyed several reading activities, cookies & juice, as well as a trip to the bookfair!  The smiles on my babies faces as they are showing off their books and school are priceless 🙂

Once home we read several of the new books that were purchased at the book fair.  Kohl likes to read to us!  I enjoyed some Cream of Wheat pudding since it was already mixed up in the fridge.  This is such a nice & healthy snack.  I think I will have to make some more of this, maybe a chocolate & peanut butter variation! 

Going to go snuggle with my boys and enjoy some reading!!

It’s a pancake kinda day!

Mmmmm, pancakes!  One of my favorite breakfasts.  I normally reserve my pancake days for Saturdays; however, considering that the hubster had me awake before dawn for fishing this past weekend, well that didn’t happen.  So what better way to start of Monday than with my beloved oatmeal pancakes.

 

Pumpkin & Raisin Oatmeal Pancakes

  • 1/2 mashed banana
  • 1/4 cup pumpkin
  • 1/2 cup oats
  • 2 tbs. flax seed (ground)
  • 1 tbs. wheat germ
  • 1/4 cup egg whites
  • pumpkin pie spice
  • raisins
  1. Mix all ingredients into a bowl.  Let it sit for about 5-10 minutes, then cook in a pan as you would a pancake.  Watch them carefully since they do not bubble like original pancakes.  When the pancake moves with a shake of the pan, it is ready to be flipped.
  2. Top with maple syrup, or your choice of topping and Enjoy!

Such a wonderful breakfast!  Now I promised on my last post that I would have a granola recipe for you guys.  Last night while the hubster was watching his football I made some of my homemade granola.  I swear I could eat this stuff by the pound.  It includes my favorite ingredients 🙂

 

Granola, Naturally!

  • 3 cups old-fashioned oats
  • 1 cup nut of your choice
  • 1/2 cup shredded coconut
  • 2 tbs. agave nectar
  • 3/4 tsp. ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 tsp. sea salt
  • 1/3 cup honey
  • 2 tbs. coconut oil
  • 1 cup dried fruit of choice
  • 1/2 cup bittersweet chocolate chips 

Preheat oven to 300. Line baking sheet with parchment or spray baking sheet with clean cooking spray. Mix first 7 ingredients in large bowl. Stir honey and oil in saucepan over medium-low heat until smooth. Pour the honey mixture over oat mixture; toss to coat; spread on baking sheet, and bake about 30 minutes. Stir every 10 minutes for even browning.  Mix in fruit & chocolate chips.

This is an easy quick granola recipe, and I have yet to find another one that I like better.  I actually took ingredients from two recipes and made this one.  You can easily change out the seasonings & sweetners to suite your tastes.

Today was pretty uneventful for a Monday, thank goodness!!  I had a little snack around 9 this morning.  I used the last of my Vanilla Caramel Truffle Tea 😦  Note to self-replace ASAP!  Of course my snack included some of my granola!

Yogurt with vanilla protein powder, pomegranate seeds, granola, nectarine, and tea.  A nice little morning snack to get me through til lunch!

Lunch today was some leftover stuffing from last night’s pumpkin on top of a small bed of spinach.  Very filling!

I also packed along a satsuma that I will probably eat 1/2 with lunch and the other 1/2 with my afternoon snack.  I was so excited to see this at the produce stand!  I have said that I was going to plant some trees this year but that hasn’t happened!  Must get to planting soon, I love these things.

I also packed along some cherry tomatoes and roasted red pepper hummus for this afternoon.  I will enjoy a cup of my peach tea with this!

 

Dinner tonight was a mixture of items from the produce drawer in the fridge plus a boiled egg that must be eaten.  The hubster grilled some pork chops.  I am not feeling the chops so much.  Not a big fan of pork chops, and it is still hard to actually chew on anything.  I had some kale chips, roasted mushrooms, roasted sweet potatoes, boiled egg, and a bulgar salad with spinach & soybeans dressed with rice vinegar & sesame oil!

I think my plate looks pretty and tasty!  I have dessert in the fridge for later. 

Pumpkin Cream of Wheat Pudding 

  • cream of wheat
  • pumpkin
  • pumpkin pie spice
  • dried fruit of choice ( I used apples & apricots
  • hot water
  • Sweetner of choice ( I used honey)
  1. Dice 1/2 cup of dried fruits and place in bowl of hot water.  Set to the side.
  2. Cook the cream of wheat according to package directions.  I like to use almond milk to cook mine in but water will be fine.
  3. Add pumpkin & spices to cream of wheat.  I used 1/4 of a cup.  If you are making a larger batch then add the amount you will need.
  4. Drain the fruit and mix in with the cream of wheat.  Add sweetner of choice. 
  5. Put the cream of wheat in a ramekin, dessert dish, or tea cup.  Cover with plastic wrap and place in the fridge to chill & set.
  6. If using a ramekin or tea cup, lightly mist with non stick spray.  It will form a mold in the cup.  Place a small saucer over the cup and turn upside down to serve.

Going to go watch a little Monday night football with the hubster.

“It’s not called catching”!

 

No, it’s not a bad pick.  It is the sky, or at least what the sky looked like when I woke up this morning.  Hello honey did you forget today is Saturday?  5:30 a.m……

At least breakfast was yummy now that I have restocked some of my favorite toppings.  Yummy  oatmeal topped with coconut, cranberries, and a nice blob of peanut butter 🙂  I tried Kath’s idea of adding cottage cheese in the mixture at the end, very nice addition.  Made the oats creamier!

  • 1/2 cup oats
  • 1 tbs. flax
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/2 mashed banana
  • 1/4 cup cottage cheese
  • little vanilla
  • granished with coconut, cranberries, peanut butter, cinnamon

Bring the milk and water to a boil on the stove.  Add the oats, flax seed, and banana.  Whisk to whip the banana in the mixture and cook until desired consistency.  Add vanilla and cottage cheese at the end.  Top with toppings and Enjoy!!

A nice cup of coffe went along with my breakfast.  The kids enjoyed some yummy cinnamon rolls.  I didn’t have time for homemade so we took a short cut, I know “bad mommy”.  Shouldn’t feed my babies that junk, but hey they love them, it  is Saturday, and I did wake them up at 6:00!

So back to my title…..This is why my husband decided to wake us all up so early!  We ended up here.  Beautiful morning!

The boys were fishing today!  Of course we didn’t have much action, and after several complaints the hubster made it a point to remind us that “It’s is not called catching, it is called fishing”.  I am not a real outdoorsy type of girl.  I mean I like to be outside but the whole fishing, hunting thing is not my style. 

So I packed along some reading entertainment, a lovely smoothie, and a few little snacks to keep me occupied.  The boys packed the remaining cinnamon rolls with them.

We did catch several so we are having trout for dinner tonight.  Kohl has requested red beans so that is on the menu as well.  The day turned out beautiful and fun 🙂

 

Once home I decided to enjoy a nice cappuccino!  Must do a little cleaning, and I have some baking in the afternoon plans as well.  Be back later with pics & recipes.

Frrriiiiidddaaayyyy!!

It’s Friday!!!  I love Fridays.  The last day of the work week merging with the beginning of the weekend is sure to be a great day.  Not only is it a great day, but I didn’t have to be in a rush to get going this morning.  I was able to go into work a little later, and the kiddos were out of school; therefore, I didn’t have to concern myself with car pool. 

I started off my Friday in style this morning with a lovely bowl of……

“Banana Cream Pie” Oatmeal

  • 1/3 cup oats
  • 1/3 cup almond milk
  • 1/3 cup water
  • 1/2 smashed banana
  • 1/2 diced banana
  • 1/4 cup greek yogurt
  • 1 scoop of vanilla protein powder
  • pinch of salt, dash of vanilla
  • cinnamon
  • 1 tbs. ground flax
  • 1 tbs. wheat germ
  1. Bring the milk and water to a boil, throw in the banana, throw in the oats & flax.  Add a pinch of salt, dash of vanilla, and whisk til creamy!
  2. Combine the yogurt & protein powder, add a dash of almond milk to thin it out a little.
  3. Pour the oats into a bowl, pour the yogurt mixture on top of the oats, top with diced banana, and sprinkle with cinnamon 🙂

I love drinking coffee on lazy mornings out of my cup & saucer.  It makes me feel like I am at a little Bistro!

How can this day get any better?  Easy if you work in my school district.  Today was parent/teacher conference day; therefore, the children were not at school.  I for one do not have to do parent conferences on this day due to my position…..

So what do I do?  I am a Speech Therapist, I have conferences with my parents frequently in order to develop IEP’s for the students I service.  So a free day sounds great right?  Well normally, yes.  However, my day was spent catching up on work due to missing 2 & 1/2 days this week with my own children being sick.  UGH!  Loads of paperwork, but still a good peaceful “catch up” day.

I had a nice cup of soup for lunch today, still having difficulty eating solid foods with the mouth being so sore 😦   My kale soup is soooo yummy, I think I could eat this everyday.  Okay well maybe not everyday, but at least for awhile until I get tired of it.

 

I made a lovely Green Monster this morning to have for my afternoon snack today, along with two of my protein “Almond Joy” balls.  Such a nice refreshing snack!

After work I hit campus for a 2 mile jog.  It was horrible.  I have built myself up to 2 miles, which makes me proud.  I usually can finish this but not today.  Between my mouth hurting, and the wind blowing full force against me I had to stop twice to walk a little.  I am thinking I made at least 1 & 3/4 of the way at a jog.  Hey if I have pain and weather against me, I’ll take it.

Tonight was breakfast night in the Garner house!!  We love our breakfast nights.   A lovely egg scramble consisting of red bell pepper, onion, mushrooms, spinach, lentils, and of course eggs.  Super filling with a small side scoop of grits 🙂

Topped off with roasted red pepper hummus and homemade salsa!

And I can’t forget the side of Great Harvest Apple Crunch Bread (my fav) with a smear of peanut butter.  Now how can dinner be any better…..

Pumpkin Brownies!  This recipe is from Oh She Glows and they are so good.  You must try them!  Angela is so talented!!  

These brownies are moist, sweet, and vegan to boot.  I do believe I could get myself into trouble with these!  Off to enjoy another one with a nice scoop of banana “ice cream”!

Going to go read & catch up on everyone else’s day.  The husband has a nice day planned for us tomorrow.  Saddened that I will not get to do pancakes, but excited for our plans.  Stay tuned for tomorrow post to hear about our adventure.

When life gives you ripe bananas….make pancakes!

I love Saturdays!  Saturdays are my scheduled rest days in my workout schedule, I am off of work, and it is pancake day in the Garner house….Apple Walnut Oatmeal Pancakes!!

It all starts with that end of the week ripe banana that must be used

Combine 1/2 of the banana (mashed), 1/3 cup of oats, 1 tbs. wheat germ, 2 tbs. ground flax seed, cinnamon, nutmeg, pinch of cloves….

Add 1/3 cup egg whites……

1/2 of apple, stewed with cinnamon

2 tbs. walnut butter (mine is homemade;)

Combine all ingredients, let it sit for about 10 minutes, cook on griddle……….

Top with the other 1/2 apple sliced and maple syrup

The perfect Saturday breakfast!!  Off to enjoy my lazy day 🙂
